Anchovy Harvest Tossed Salad (Serve with any Rice Entree)
Ingredients:
1 cup of chopped pineapple
½ cup of baby spinach
2 hard boiled eggs, chopped
I cup of medium ripe tomatoes, chopped
1 sweet red peppers, chopped fine
1/2 cup chopped cucumber
8 anchovy fillets, chopped
1 small onion, sliced thin
1/2 cup black olives, pitted and halved
1 t chopped fresh cilantro
3 T. olive oil
1 T. vinegar
Add salt and ground black pepper to taste
Place all ingredients into a salad bowl and toss gently to mix ingredients.
