Ingredients:
2 or 3 well-ripened plantains
2 1/2 tablespoons olive oil
1/2 teaspoon cayenne pepper
1 medium onion, finely chopped
3 garlic cloves, minced
1 thumb-sized piece of fresh ginger, finely chopped)
Salt to taste
In bowl, mix the red pepper, ginger, garlic, onion, oil and salt
Peel plantains and cut diagonally into 1/2 inch thick pieces
Place plantains in a bowl; add mixed spices
Use mixture to coat the plantains
Chill for 1-2 hours to set and jazz-up the flavors
Heat oil in a skillet
Place plantains in a single layer into skillet
Sauté until browned, turn over and brown other side
Repeat until all the plantains are cooked.
